Once you have a design done for stationary, how do you select the golden details for them to be printed in offset or digital? Do you have to select the golden details in your design in Adobe somehow so that the printer recognizes what needs to be printed in gold?

So, there's no difference between offset and digital except price. Unless you are a snobby print expert who cares for no reason.
