What is the easiest way to serve guest?? seated or buffet. Want it to be elegant but not pulling my hair out. Have done less formal event and buffet was easy…but that was for BBQs and church picnics not a formal wedding. Any advice???

I have a wedding to do a drop off service for. 160 people. I’m not “catering” because I will also be in attendance. The venue has a kitchen. How soon would you start cooking and prepping? Menu is Herbed Salmon, Chicken Marsala, mashed potatoes, baked Mac, green beans, tossed salad… Cocktail hour is meatballs, charcuterie board and tea sandwiches. Any advice con keeping things warm for the servers would help
Is the an easy way the carry the chafing dish to and event? For the ones that do not collapse? Especially when you need a lot of them. Any advise
